The Glycemic Index (GI) is a ranking of carbohydrates on a scale from 0 to 100 according to the extent to which they raise blood sugar levels after digestion. High GI foods cause high or fluctuations in blood sugar levels while low GI foods causes gradual rises in blood sugar and insulin levels.

Here are some of the most important of the 300 or so foods for which scientists have determined their glycemic indexes. The index uses white bread as the baseline with its index set as being equal to 100. The higher the index of a food the quicker it raises blood sugar.

Suchero is classified as a low GI food of only 35 according to tests done by the Food and Nutrition Research Institute of the Department of Science and Technology, Philippines. Cane sugar's Glycemic Index is 60. In a comparative study made by the University of the Philippines' Institute of Chemistry, Suchero was found to have about 50% lower effect on Blood Glucose Level (BGL) Response as compared to white sugar.

As seen on the chart, Suchero appears to have 50% lower effect on blood sugar level response compared to white sugar.

Other tests also show that, Suchero is also found to have Vitamin C and fiber. Aside from being a low GI food, Suchero was reported to have higher amounts of macronutrients such as nitrogen, phosphorus, potassium, chlorine, magnesium and sulfur, and micronutrients such as zinc, iron, boron, copper and manganese as compared to brown and white sugar.

This indicates that Suchero is an ideal sweetener substitute for the preparation of low GI diets and can be safely used by diabetic patients or patients with high sugar level. When incorporated in low GI diets, Suchero can help in the proper control and management of diabetes, weight management, and prevention of heart disease and obesity.
